Fish for Dinner - Arctic Char with Soy-Sesame Glaze

It’s a few months now that we’ve been on this sustainable fish cookery jag and, as a former fish non-enthusiast, I have to say that it's been far more satisfying and a lot easier than expected. I’m sure there are many ways to cook fish in a complicated fashion but we haven’t felt the need to try any of those lately. Most of our favorite fish recipes use, at most, 2-3 ingredients besides the fish, often butter and lemon. The other flavor trifecta frequently used with fish – soy sauce, sesame and in this case honey (sometimes it’s ginger) – is featured here.

How We Prepared It:

  • Arctic Char with Soy-Sesame Glaze – recipe from Hooked on Fish, originally from Martha Stewart
  • Fingerling Potatoes with Butter and Chives – boil the potatoes ahead of time, then sauté with butter and fresh chives
  • Asparagus-Pea Medley, blanched separately, then combined


The Verdict: Really tasty. The flavor combo seems kind of obvious and maybe a little bit pedestrian – soy sauce, sesame & scallions, ho-hum. But there’s no denying that the flavor combo works and that this fish loves it. Soaks it up like a sponge and makes a very satisfying fish dinner. The go-withs were tasty too but nothing super-special. Overall this is an easy treatment for just about any fish or perhaps a thin (pounded) cutlet of chicken or pork.

Ingredients:

  • 3 tablespoons soy sauce
  • 1 tablespoon honey
  • 3/4 teaspoon toasted sesame oil
  • 1 lb Arctic char (cut to fit in your pan)
  • Coarse salt and black pepper to taste
  • Green onions cut on the bias, white and light green parts, as garnish

Directions:

  • In a small bowl, stir together the soy sauce, honey, and sesame oil. 

  • Season the fish with salt and pepper and brush with half of the sauce.

  • Heat a cast-iron (or non-stick) skillet over high heat. Sear the fish skin side up for 4 minutes (be careful not to let the honey in the sauce burn). 

  • Pour the remaining sauce over the fish and swirl the sauce around the pan. 

  • Carefully turn the fish, spoon the sauce over the top, and cook for 3 more minutes, until the fish is just cooked through. 

Serves 2 to 3.
